Eggplant With Mozzarella Cheese

Ingredients

  • 3 lb. eggplant
  • salt
  • olive oil
  • 2 onions, chopped
  • 1 clove garlic, crushed
  • 2 lb. tomatoes, chopped
  • thyme and oregano to taste
  • 1/2 c. grated Parmesan cheese
  • 1 lb. Mozzarella cheese

Directions

    Slice the eggplant and sprinkle with salt.

    Set aside for about 1 hour.

    Drain and pat dry.

    Saute in olive oil; drain and place in baking dish.

    Saute the onions and garlic in olive oil for 2 minutes.

    Add tomatoes, thyme and oregano; simmer for 1/2 hour.

    Pour tomato sauce over the eggplant; sprinkle with Parmesan cheese.

    Slice the Mozzarella and arrange slices on top.

    Dot with butter or margarine.

    Bake in a 325° oven for 1 hour.
