Eggplant With Mozzarella Cheese

Ingredients
- 3 lb. eggplant
- salt
- olive oil
- 2 onions, chopped
- 1 clove garlic, crushed
- 2 lb. tomatoes, chopped
- thyme and oregano to taste
- 1/2 c. grated Parmesan cheese
- 1 lb. Mozzarella cheese
Directions

1Slice the eggplant and sprinkle with salt.

2Set aside for about 1 hour.

3Drain and pat dry.

4Saute in olive oil; drain and place in baking dish.

5Saute the onions and garlic in olive oil for 2 minutes.

6Add tomatoes, thyme and oregano; simmer for 1/2 hour.

7Pour tomato sauce over the eggplant; sprinkle with Parmesan cheese.

8Slice the Mozzarella and arrange slices on top.

9Dot with butter or margarine.

10Bake in a 325° oven for 1 hour.
