  • 2 whole wheat English muffins
  • 2 eggs, beaten
  • 1 tsp. goat cheese
  • 1 tsp. sun-dried tomato
  • 4 c. spinach, cleaned and stems removed
  • olive oil
  • 2 cloves garlic, minced
  • 2 tsp. tarragon sauce

Directions

    Coat pan with little olive oil and cook on low heat in pan the eggs, goat cheese and dried tomato until light and fluffy. In a saute pan, add olive oil, garlic and spinach. Cook until spinach is just wilted. Toast muffins. Add spinach to muffin. Top with egg and Tarragon Sauce.
