- 2 lb. ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 pkg. enchilada sauce mix
- 1 pkg. taco seasoning mix
- 1 (12 oz.) can tomato paste
- 1 (10 3/4 oz.) mushroom soup
- 2 to 3 jalapenos, chopped
- 4 to 5 c. water
- 1 lb. sharp cheese, grated
- 15 tortillas
Directions

1Brown beef until all pink is gone.

2Pork drippings.

3Add onions and garlic; mix thoroughly.

4Stir in enchilada sauce mix and taco seasoning mix.

5Add tomato paste, soup and jalapenos.

6Add water slowly; cover and simmer about 45 minutes.

7Beginning with a thin layer of meat sauce, alternate layers of sauce, tortillas and grated cheese in a 13 x 9 x 2-inch baking dish until all ingredients are used, ending with cheese.

8Bake at 325°, covered, for 45 minutes.

9Uncover and bake 15 minutes longer.

10Yield: 8 to 10 servings.
