- 1 small pkg. corn tortillas
- 1 lb. ground beef
- 2 small cans enchilada sauce
- 1 egg
- 1 small onion
- 2 c. grated Cheddar cheese
- 1/2 c. Mozzarella or Monterey Jack
Directions

1Brown ground beef with onion; season and drain.

2In bowl, soak corn tortillas with enchilada sauce.

3Line bottom of 13 x 9-inch baking dish with layer of tortillas.

4Layer ground beef.

5Mix cheeses and egg.

6Layer cheese, sauce, tortillas and beef until ingredients are used.

7Top with tortillas, covered with sauce. Small amount of water may be added to sauce for moistness.
