- 1 pkg. enchilada mix
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 1 1/2 lb. ground beef
- 2 cans enchilada sauce
- 1/2 tsp. garlic flakes
- Cheddar cheese, sliced
- mild Longhorn
- 1 pkg. corn tortillas
Directions

1Combine in skillet, onion, bell pepper, garlic, ground beef, salt and pepper to taste.

2Cook until ground beef is done and then drain.

3Heat enchilada sauce in pan.

4Dip each tortilla in enchilada sauce.

5Put a layer of dipped tortillas, ground beef mix, cheese and small amount of enchilada sauce, another layer of dipped tortillas, ground beef mix, cheese and small amount of sauce.

6Finally 3rd layer of dipped tortillas and remainder of sauce.

7Bake in oven at 350° for 20 minutes.

8Top with cheese and bake until cheese melts.
