- 1 (28 oz.) can Las Palmas enchilada sauce
- 1 small onion, cut up
- 1 doz. corn tortillas
- 2 lb. ground beef (lean)
- 1 large pkg. shredded Cheddar cheese
- cooking oil
Directions

1In a large skillet, cook ground beef until crumbly.

2Drain fat.

3(Include onion when cooking the beef.)

4Open the can of enchilada sauce and pour approximately 1/2 cup of sauce into beef; mix well.

5In a small skillet, heat 1/2 cup of oil until warm. Cook the corn tortillas slightly on each side until they are soft. In a large baking dish place a tortilla inside.

6Spoon into the tortilla a couple of tablespoons of meat.

7Add a bit of cheese and roll the tortilla until the bottom is toward the bottom of the baking dish.

8Continue until you run out of meat or tortillas. Pour the rest of the enchilada sauce on the top of the enchiladas and pour the remaining cheese on top of that.

9Bake at 350° for 20 to 25 minutes or until cheese melts.

10Serve with rice or beans. Garnish with fresh olives.
