Ernie'S Broccoli Cornbread

  • 1 box Jiffy cornbread mix
  • 1 (10 oz.) pkg. frozen chopped broccoli, thawed and drained (do not cook)
  • 1/2 c. margarine, melted (I use less)
  • 1 large onion, chopped
  • 6 oz. cottage cheese
  • 1 tsp. salt
  • 4 eggs, beaten

Directions

    Mix all ingredients, except the cornbread mix.

    Add mix last. Pour into greased 9 x 13-inch pan.

    Bake for 25 minutes at 400°. Serve hot.

    Do not overbake.

    Delicious with soup on cold days.
