Fat-Free Mashed Potatoes

- 6 to 8 medium size potatoes (more if you desire)
- 1 small onion, cut in half
- 1 clove garlic (optional)
- evaporated skim milk
- pepper to taste
Directions

1Put onion and garlic in cooking pan with potatoes.

2Add enough water to cover potatoes.

3Bring to a boil.

4Simmer 30 to 35 minutes or until tender.

5Remove the onion and garlic.

6Drain the potatoes in a colander until thoroughly drained.

7Pat dry, if necessary, to remove excess moisture.

8Cut potatoes into chunks and mash by hand or use electric mixer.

9Mash potatoes until free of lumps.

10Add the desired amount of evaporated skim milk and whip until creamy. Season with pepper to taste.
