- 1 large eggplant
- 2 eggs
- 1 onion
- 1 c. milk
- 1 green pepper
- 1 tsp. salt
- 2 c. bread crumbs
- 2 Tbsp. butter, melted
Directions

1Peel and slice eggplant.

2Boil in 3 cups water.

3Add salt and pepper.

4Place bread crumbs in casserole.

5Add eggplant, onion and pepper; mix thoroughly.

6Add 2 eggs, beaten in milk.

7Pour over mixture.

8Put more crumbs on top and put 2 tablespoons melted butter on top.

9Bake at 350° for 25 to 30 minutes.
