Favorite Lemon Sponge Pie

  • 2 1/2 c. sugar
  • 5 egg yolks (reserve whites for folding in later)
  • 4 heaping Tbsp. flour
  • 2 1/2 c. milk
  • juice of 3 lemons
  • rind of 1 lemon
  • pinch of salt
  • 2 Tbsp. butter

Directions

    Cream the butter, flour and sugar.

    (Keep 1/2 cup sugar for egg whites.)

    Add lemon juice and rind; mix well.

    Beat egg whites until stiff, then fold into first mixture gently.

    Pour into 2 unbaked pie shells.

    Bake at 450° for 8 to 10 minutes.

    Reduce temperature to 350° for 25 minutes or until done.
