- 2 1/2 c. sugar
- 5 egg yolks (reserve whites for folding in later)
- 4 heaping Tbsp. flour
- 2 1/2 c. milk
- juice of 3 lemons
- rind of 1 lemon
- pinch of salt
- 2 Tbsp. butter
Directions

1Cream the butter, flour and sugar.

2(Keep 1/2 cup sugar for egg whites.)

3Add lemon juice and rind; mix well.

4Beat egg whites until stiff, then fold into first mixture gently.

5Pour into 2 unbaked pie shells.

6Bake at 450° for 8 to 10 minutes.

7Reduce temperature to 350° for 25 minutes or until done.
