- cooking oil
- flour
- 2 chickens, cut up
- 1 lb. smoked sausage, sliced
- 1 lb. ham pieces
- 1 pt. oysters (including juice)
- 1 lb. peeled shrimp
- 3 to 4 chopped onions
- 4 to 5 chopped shallots
- 2 sticks chopped celery
- chopped parsley
- chopped garlic
- salt and pepper to taste
- file to taste
Directions

1In large pot cover the bottom with cooking oil.

2Add flour little by little (over medium heat) to make a smooth roux.

3Stir constantly until brown; add seasonings and meat.

4Simmer and add water to cover completely.

5Cook, covered, for about 1 1/2 hours. Add salt, pepper and file seasoning.

6Cook another hour.

7Serve over rice.
