  • 1 lb. sole fillets
  • 1 large can crushed tomatoes
  • 2 tsp. crushed garlic
  • 1 tsp. dill
  • 1 Tbsp. lemon juice
  • 2 (10 oz.) pkg. spinach
  • 1/2 lb. small cleaned and cooked shrimp
  • 6 oz. mixture grated Romano and Parmesan

Directions

    Defrost and squeeze spinach of all water.

    Spread over bottom of 9 x 13-inch glass pan.

    Layer sole fillets on top of spinach. In large saucepan, thoroughly heat just to boiling, tomatoes, garlic, dill and lemon juice.

    Cook 15 minutes.

    Add shrimp.

    Pour sauce over fish.

    Sprinkle with cheese.

    Bake at 350° for 30 minutes or until fish is done.
