- 1 c. water
- 1 c. diced potatoes
- 3 slices salt pork, chopped
- 1 medium onion, chopped
- 3/4 lb. white fish fillets (such as haddock or cod), cubed
- 1/8 tsp. dried whole thyme
- 1/8 tsp. marjoram
- 1 c. half and half
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/2 to 1 tsp. parsley
Directions

1Bring water to a boil in a Dutch oven.

2Add potatoes.

3Cover and cook 10 minutes.

4Fry salt pork until transparent.

5Add onion and cook until onion is soft and salt pork is lightly browned. Add salt pork, drippings, fish fillets, thyme and marjoram to potatoes.

6Simmer 10 minutes or until potatoes are tender.

7Stir in half and half, salt and pepper; simmer 5 minutes.

8Sprinkle with parsley.

9Yields 3 1/2 cups.
