1In a medium nonstick frypan, heat the sugar over medium heat, tilting and shaking pan often, until sugar melts and turns a pale amber color (about 8 minutes).

2Watch closely since sugar scorches easily.

3Immediately pour caramel syrup into a round 1-quart baking dish, tilting to coat bottom and 1/2-inch of sides.

4Place dish in a larger pan, such as an 8-inch or 9-inch square pan and set aside.
