  • 6 1/2 cups red grapes
  • 2 3/8 cups flour
  • 1 2/3 tablespoons yeast brewer's
  • 3/4 cup granulated sugar
  • 3 3/8 tablespoons extra-virgin olive oil

    Preheat the oven to 180C.

    Dissolve the yeast in some warm water, knead it together with the flour, sugar, oil, and a pinch of salt, adding more warm water until the dough is soft, elastic and no longer sticks to your hands.

    Shape the dough into a ball, cover it and let it rise in a warm area for a few hours.

    Wash the grapes well and separate them from the stems.

    Knead the dough again for a few more minutes, divide it into two parts and roll it out to two thick sheets.

    Line a rectangular baking sheet with wax paper brushed with oil and place the sheet of dough on it.

    Place the grapes on the dough (keep a handful of the grapes aside for later), sprinkle with sugar, and cover with the second sheet of dough.

    Pinch the edges of the dough together to seal them closed.

    Brush the dough with oil, garnish with the grapes set aside earlier and sprinkle with sugar.

    Bake for approximately 45 minutes.

    Serve warm sprinkled with more sugar.
