- 3 1/4 cups corn flakes
- 2/3 cup shredded coconut, toasted
- 1/3 cup unsalted pistachios, toasted, chopped
- 2/3 cup dried apricots, finely chopped
- 3.5 oz red candied cherries, quartered
- 12 tbsp butter, chopped
- 2 tbsp sugar
- 2 tbsp honey
- 2.5 oz white chocolate, melted
Directions

1Line 2 - 12-cup muffin pans with paper liners. Combine corn flakes, coconut, pistachios and fruit in a large bowl.

2Combine butter, sugar and honey in a small saucepan over low heat. Cook, stirring, for 3-4 mins, or until butter is melted and sugar dissolves. Add to corn flake mixture and mix well to combine. Distribute between paper liners and chill for 30 mins, or until firm. Drizzle melted chocolate over top of clusters to serve.
