Fluffy Dumpling Chicken Soup

- 8 cups chicken stock
- 2 -3 cups of diced cooked chicken or 2 -3 cups shredded cooked chicken
- 3 stalks of diced celery
- 3 diced carrots
- dumplings
- 1 1/2 cups self raising flour
- 1 teaspoon salt
- 45 g butter
- margarine
- 3/4 cup milk
Directions

1Heat first four ingredients in large saucepan until vegetables are soft, around 20-25 minutes.

2Meanwhile make dumplings.

3Mix flour and salt then rub butter with fingertips until mixture resembles breadcrumbs.

4Mix in milk.

5Drop golf ball size dumplings into pot.

6Cover and simmer for 20 minutes. DO NOT LIFT LID.

7Serve hot.
