Ingredients
- 4 jumbo or 8 regular carrots
- 1/2 large yellow sweet onion
- 2 Tbsp. butter or margarine
- 1 Tbsp. orange flower water or orange juice
- 1/4 tsp. vanilla
- 1/4 c. skim evaporated milk
- 1 Tbsp. light brown sugar
- salt and pepper to taste
Directions

1Scrape carrots and slice thinly.

2Peel onion and slice thinly. Combine vegetables in saucepan and add just enough water to cook; boil, covered, until very soft.

3Strain water from vegetables and place vegetables in food processor or blender.

4Add all remaining ingredients and puree until smooth.
