Fragrant Carrot Puree

Ingredients

  • 4 jumbo or 8 regular carrots
  • 1/2 large yellow sweet onion
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. orange flower water or orange juice
  • 1/4 tsp. vanilla
  • 1/4 c. skim evaporated milk
  • 1 Tbsp. light brown sugar
  • salt and pepper to taste

Directions

    Scrape carrots and slice thinly.

    Peel onion and slice thinly. Combine vegetables in saucepan and add just enough water to cook; boil, covered, until very soft.

    Strain water from vegetables and place vegetables in food processor or blender.

    Add all remaining ingredients and puree until smooth.
