Fried Chicken Parmesan

- 1 (3 oz.) can grated Parmesan cheese
- flour
- 1 tsp. salt
- 2 1/2 to 3 lb. broiler-fryer, cut up
- 1/4 c. oil
- 1 1/4 c. cold water
- 1 (6 oz.) can water chestnuts, drained and sliced
- 2 Tbsp. chopped pimento
Directions

1Combine 1/4 cup cheese, 1/4 cup flour and salt; coat chicken. Brown in oil on all sides.

2Cover.

3Cook 30 minutes over low heat or until tender.

4Remove chicken.

5Drain fat.

6Gradually add water to 2 tablespoons flour, stirring until well blended.

7Add flour mixture to pan.

8Cook, stirring constantly, until mixture boils and thickens.

9Stir in water chestnuts, pimento and remaining cheese. Add chicken and cover.

10Simmer 5 minutes, stirring occasionally. Makes 4 to 6 servings.
