- 4 Tbsp. bacon fat or cooking oil
- 2 eggs, optional
- 1/2 c. chopped scallions
- 1/2 c. leftover roast pork, diced
- 1/4 c. celery, sliced
- 1/2 c. cooked peas
- 2 c. cooked rice
- 1 Tbsp. soy sauce
Directions

1Heat 1 tablespoon fat in a small skillet.

2Break eggs into a bowl and beat well.

3Add to skillet and cook omelet fashion.

4Break eggs into small pieces and set aside.

5In a large skillet heat remaining 3 tablespoons fat.

6Add scallions and celery, stir-fry. Add pork and fry briefly.

7Stir in peas, then add the rice, stirring rapidly.

8Add 1 tablespoon soy sauce, mixing well, then add eggs.

9Cook and stir until everything is heated through.
