- 3 Tbsp. butter
- 2 tsp. minced fresh or crystal ginger
- 1 clove garlic, crushed
- 1/2 c. thinly sliced pork
- 1/2 doz. shrimp, shelled
- 1/2 c. chopped scallions
- 5 to 6 c. cooked rice
- salt and pepper
- 2 eggs
Directions

1In a large frypan, melt butter and saute ginger and garlic. Add pork and saute until well done.

2Add shrimp and saute until tender.

3Stir in scallions and rice.

4Cook until heated through. Add seasonings.

5Make hole in center of rice.

6Crack eggs into hole.

7Beat until partially cooked.

8Stir-fry into rice until well cooked and mixed.
