Ingredients

  • 3 Tbsp. butter
  • 2 tsp. minced fresh or crystal ginger
  • 1 clove garlic, crushed
  • 1/2 c. thinly sliced pork
  • 1/2 doz. shrimp, shelled
  • 1/2 c. chopped scallions
  • 5 to 6 c. cooked rice
  • salt and pepper
  • 2 eggs

Directions

    In a large frypan, melt butter and saute ginger and garlic. Add pork and saute until well done.

    Add shrimp and saute until tender.

    Stir in scallions and rice.

    Cook until heated through. Add seasonings.

    Make hole in center of rice.

    Crack eggs into hole.

    Beat until partially cooked.

    Stir-fry into rice until well cooked and mixed.
