- 2 Tbsp. cooking oil
- 2 beaten eggs
- 2 green onions, thinly sliced
- 1 (4 1/2 oz.) can small shrimp, rinsed and drained
- 1/2 c. finely chopped, fully cooked ham or chicken
- 1 (7 oz.) jar whole straw mushrooms, drained, or 1 (6 oz.) can sliced mushrooms, drained
- 3 c. cooked, white rice, chilled
- 2 Tbsp. soy sauce
- 1 c. shredded lettuce
- 1/2 c. frozen peas, thawed
Directions

1Pour 1 tablespoon of oil into a large skillet.

2Preheat over medium heat.

3Add eggs.

4Lift and tilt the skillet to form a thin sheet of egg.

5Cook, without stirring, about 2 minutes or just until set.

6Slide sheet onto a cutting board.

7Cut into 2 x 1/2-inch strips.

8Pour remaining oil into skillet.

9Preheat over medium-high heat.

10Add green onions; stir-fry for 30 seconds.

11Add the shrimp, ham and mushrooms; stir-fry for 1 minute, adding more oil if necessary.

12Stir in rice.

13Sprinkle with soy sauce; stir-fry 1 to 2 minutes more.

14Stir in egg strips, lettuce and peas; heat through.

15Gently toss.

16Serve immediately.
