  • 2 Tbsp. cooking oil
  • 2 beaten eggs
  • 1/2 c. diced cooked ham (optional)
  • 1/4 c. finely chopped fresh mushrooms
  • 1/4 c. thinly sliced green onion
  • 3 c. unsalted cooked rice, cooled
  • 2 c. chopped Chinese cabbage, fried
  • 2 Tbsp. soy sauce
  • salt and pepper

    In a large skillet, heat 1 tablespoon oil over medium heat. Add eggs and cook, without stirring, until set.
