- 4 eggs, beaten
- 2/3 c. green onions, chopped
- 2/3 c. sweet red pepper, chopped
- 1/3 c. green bell pepper, chopped
- 5 c. cooked, chilled rice
- 2/3 c. honey roasted peanuts
- 1/2 c. soy sauce
Directions

1Melt margarine in large skillet, add eggs, cook over medium heat until almost set.

2Stir in onions, peppers and rice.

3Cook 5 minutes, stirring frequently; add soy sauce.

4Cook 2 minutes. Stir in peanuts.
