  • 6 Tbsp. margarine
  • 4 eggs, beaten
  • 2/3 c. green onions, chopped
  • 2/3 c. sweet red pepper, chopped
  • 1/3 c. green bell pepper, chopped
  • 5 c. cooked, chilled rice
  • 2/3 c. honey roasted peanuts
  • 1/2 c. soy sauce

Directions

    Melt margarine in large skillet, add eggs, cook over medium heat until almost set.

    Stir in onions, peppers and rice.

    Cook 5 minutes, stirring frequently; add soy sauce.

    Cook 2 minutes. Stir in peanuts.
