Ingredients

  • 3/4 c. cooking oil
  • 2 1/2 c. sugar
  • 1 1/2 c. ripe bananas, mashed
  • 2 eggs, well beaten
  • 1 small can crushed pineapple
  • 2 1/2 c. flour
  • 1/4 tsp. salt
  • 3/4 tsp. baking soda
  • 1 tsp. vanilla

Directions

    Mix sugar, bananas, eggs and pineapple.

    Combine with oil. Combine flour, salt and baking soda; fold into fruit mixture.

    Add vanilla and mix well.

    Grease tube pan and dust with flour.

    Pour in mix.

    Bake for 1 hour and 45 minutes in a 300° oven.

    Cool. May be frozen.
