Fruit-Stuffed Chicken Legs

  • 6 each chicken legs
  • 3/4 cups herb stuffing mix seasoned
  • 3 tablespoons orange juice
  • 2 tablespoons raisins, seedless
  • 2 tablespoons apricots dried, chopped
  • 1 tablespoon butter melted
  • 1 x cinnamon
  • 1 tablespoon apricot preserves (jam) or peach

    Combine orange juice, fruits and butter with stuffing mix, blend until stuffing is thoroughly moistened.

    Carefully work fingers between the skin and meat of each chicken leg to form a pocket.

    Place stuffing under the skin.

    Arrange stuffed legs in a 9x9 baking dish, sprinkle lightly with cinnamon.

    Bake uncovered at 375F (190C) for 1 hour.

    Brush with preserves during the last 10 mins.
