- 1 lb. fresh fruit such as raspberries, blueberries, apricots or figs
- 5 c. white wine vinegar
- 1 Tbsp. sugar
Directions

1Combine fruit and vinegar in a sterilized glass jar with airtight seal.

2Leave in warm place to steep.

3Shake jar occasionally.

4Strain fruit and vinegar into saucepan, pressing to extract flavor from fruit.

5Add 1 tablespoon sugar and stir to blend.

6Place mixture over low heat and simmer for 10 minutes. Transfer to sterilized jars.

7For a more attractive presentation, add a few fresh berries or pieces of fruit.
