- 12 cup flour
- 12 cup whole wheat flour
- 12 cup oats
- 14 cup flax seed, ground
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 14 teaspoon salt
- 1 large egg
- 34 cup packed brown sugar
- 14 cup butter, melted
- 1 teaspoon vanilla extract
- 1 unpeeled apple, diced
- 1 cup fresh cranberries or 1 cup frozen cranberries
- 12 cup raisins
Directions

1Preheat oven to 350F.

2Mix dry ingredients (minus sugar) in a large bowl.

3Break egg into another bowl, add sugar, whisk until smooth.

4Whisk in melted butter and vanilla.

5Stir in fruit.

6Pour over dry ingredients and fold just until dry ingredients are moistened.

7Spoon batter into muffin cups lined with cupcake papers.

8These don't really rise, so fill the cups full.

9Bake 20-25 minutes.
