Fruity Rice Salad

Ingredients
- 3 to 4 c. steamed rice, cooled
- 1 can pineapple chunks or tidbits, drained
- 1 large navel orange or 11 oz. can Mandarin oranges, drained
- 1/2 c. green, yellow and/or sweet red pepper, diced
- 1/4 c. sliced or slivered almonds
- 4 Tbsp. salad oil
- 2 Tbsp. seasoned rice vinegar
- 1/8 tsp. ground cinnamon
- 2 tsp. each lime juice and honey
- honey-mustard dressing
Directions

1If using navel orange, peel and section it, then cut sections into bite-sized pieces.

2Combine rice, fruit, peppers and almonds. In small bowl, whisk together salad oil, seasoned rice vinegar, cinnamon, lime juice and honey; pour over rice mixture and gently stir.

3Chill.

4Serve with honey-mustard dressing.
