Fruity Rice Salad

Ingredients

  • 3 to 4 c. steamed rice, cooled
  • 1 can pineapple chunks or tidbits, drained
  • 1 large navel orange or 11 oz. can Mandarin oranges, drained
  • 1/2 c. green, yellow and/or sweet red pepper, diced
  • 1/4 c. sliced or slivered almonds
  • 4 Tbsp. salad oil
  • 2 Tbsp. seasoned rice vinegar
  • 1/8 tsp. ground cinnamon
  • 2 tsp. each lime juice and honey
  • honey-mustard dressing

Directions

    If using navel orange, peel and section it, then cut sections into bite-sized pieces.

    Combine rice, fruit, peppers and almonds. In small bowl, whisk together salad oil, seasoned rice vinegar, cinnamon, lime juice and honey; pour over rice mixture and gently stir.

    Chill.

    Serve with honey-mustard dressing.
