Ingredients

  • 2 c. seedless raisins
  • 2 c. water
  • 1/2 c. sugar
  • 2 Tbsp. all-purpose flour
  • 3 Tbsp. lemon juice
  • 1/2 c. chopped nuts, optional
  • 2 tsp. grated lemon peel, optional
  • pastry for 9 inch double-crust pie

Directions

    In a saucepan, bring raisins and water to a boil.

    Reduce heat; simmer, uncovered for 5 minutes.

    Combine sugar and flour; add to raisin mixture.
  4. 4
    Cook and stir 1 minute longer.

    Remove from the heat; stir in lemon juice, nuts and lemon peel if desired. Line a 9 inch pie plate with bottom pastry, trim edges even with plate.

    Add filling.

    Top with a lattice crust, or cover with top pastry and cut slits in top.

    Bake at 425° for 30-40 minutes or until filling is bubbly and crust is golden brown.

    If necessary, cover edges with foil to prevent over browning.
