Ingredients
- 2 sprigs fresh rosemary
- 1 garlic clove, peeled
- 2 (15 1/2 ounce) cans garbanzo beans, rinsed and drained
- 14 cup olive oil
- 14 cup sesame tahini (optional)
- 14 cup balsamic vinegar
- 14 cup cold water
- salt, to taste
- ground black pepper, to taste
Directions

1Strip rosemary leaves from stems, discard stems, and place leaves in the bowl of a food processor.

2Add garlic and pulse until finely chopped.

3Pour in the garbanzo beans; process until evenly blended.

4With food processor running, slowly pour in the olive oil, scraping down sides of the bowl as necessary.

5Pour in tahini, if using, then balsamic vinegar and process until evenly blended.

6Taste, and add more vinegar, 1 tablespoon at a time, until desired flavor is achieved.

7Pour in the water and process to make a spreadable consistency.

8Add more water, 1 tablespoon at a time, if necessary.

9Season with salt and pepper to taste.

10Chill before serving.
