- 1 large clove garlic, thinly sliced
- 1 1/2 c. safflower oil
- 1 egg
- 1 Tbsp. fresh lemon juice
- salt and pepper to taste
Directions

1Cook garlic in 1/4 cup of the safflower oil over moderately high heat for 30 seconds.

2Do not brown garlic.

3Remove garlic and discard.

4Let oil cool slightly.

5In a food processor or blender, combine egg, lemon juice and garlic oil.

6Process until smooth and well blended.

7With motor running, add remaining oil, drop by drop, until mix thickens.

8Then add oil in a steady stream; season to taste with salt and pepper.

9Add additional juice, if desired.
