Garlic Mayonnaise

  • 1 large clove garlic, thinly sliced
  • 1 1/2 c. safflower oil
  • 1 egg
  • 1 Tbsp. fresh lemon juice
  • salt and pepper to taste

Directions

    Cook garlic in 1/4 cup of the safflower oil over moderately high heat for 30 seconds.

    Do not brown garlic.

    Remove garlic and discard.

    Let oil cool slightly.

    In a food processor or blender, combine egg, lemon juice and garlic oil.

    Process until smooth and well blended.

    With motor running, add remaining oil, drop by drop, until mix thickens.

    Then add oil in a steady stream; season to taste with salt and pepper.

    Add additional juice, if desired.
