- 1 1/2 cups all-purpose flour
- 3/4 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup margarine
- 1/3 cup packed brown sugar
- 1 egg
- 1/2 cup boiling water
- 1/3 cup molasses
Directions

1Pre-heat oven to 350 degrees.

2Grease muffin tins or line muffin tin with muffin cups.

3Stir flour cinnamon, ginger, baking powder, baking soda and set aside.

4Beat margrine on medium speed for 30 seconds.

5Add brown sugar, beat until fluffy.

6Add egg beat until well combined.

7In a small bowl combine boiling water and molasses add to brown sugar mix beating until well combined.

8Add flour mixture, beating until combined.

9spoon batter into prepared muffin tins, fill 2/3 full.

10Bake 9 minutes or until wooden pick comes out clean.

11Cool muffins in pan for 5 minutes.
