- 2 lb. carrots
- 3 Tbsp. margarine
- 2 Tbsp. sugar
- 1/4 c. apricot preserves
- salt to taste
Directions

1Wash and scrape carrots; cut in diagonal slices.

2Cook, covered, in small amount of water until just tender (approximately 12 minutes).

3Drain.

4Heat margarine, sugar and preserves in saucepan, stirring to combine.

5Stir into carrots until coated. Cook over low heat, stirring gently about 3 minutes.
