- 1 head lettuce leaves separated
- 28 ounces mixed beans rinsed
- 2 tomatoes large, cut into wedges
- 1 cucumber halved, sliced
- 1/2 red onion small, thinly sliced
- 1/2 tablespoon red wine vinegar
- 1/4 cup vegetable oil
- 1 pound chicken breast cut into thin strips
- 2 ounces polenta
Directions

1Combine lettuce, beans, tomatoes, cucumber and onion in a serving bowl. Set aside. Whisk together vinegar and 2 tbsp oil. Season. Set aside.

2Heat remaining oil in a nonstick frying pan over medium-high heat. Coat chicken strips in polenta then cook for 2-5 mins, until golden brown and cooked through. Add to salad along with vinaigrette and toss to combine. Serve.
