Ingredients
- 1 qt. gooseberries
- 1 1/2 c. sugar
- 1/4 c. flour or 3 Tbsp. cornstarch
- pinch of salt
- juice and grated rind of 1/2 lemon
- 1 Tbsp. butter
- double pie crust for 9-inch dish
Directions

1In a large bowl mix all ingredients except butter and set aside.

2Make pastry.

3Roll half the pastry and line a 9-inch pie pan.

4Fill shell with berry mixture.

5Dot with butter, cut into small pieces.

6Roll out remaining pastry, moisten edges of lower crust, lay top crust on and seal.

7Prick small holes all over crust and sprinkle with sugar.

8Bake in preheated 425° oven 35 to 40 minutes.

9If crust browns too quickly, cover loosely with foil.
