Ingredients

  • sherry or sweet wine
  • salt and pepper
  • favorite dressing
  • orange marmalade
  • butter or oleo, melted
  • maple syrup
  • Kitchen Bouquet

Directions

    Soak large duck 4 hours in sherry or other sweet wine.

    Season inside of duck with salt and pepper.
  3. 3
    Stuff loosely with favorite dressing.
  4. 4
    Salt and pepper outside of duck.

    Place each duck on double thickness of foil.
  6. 6
    Spread generous amount of orange marmalade on each duck and wrap tight in foil.

    Cook on open baking sheets at 325° for 3 hours.

    Turn back foil and brush with mixture of butter, syrup and Kitchen Bouquet.

    Return to oven with foil turned back.
  10. 10
    Bake 30 more minutes or until browned.
