- 1/3 c. currants
- 2 Tbsp. brandy
- 1 c. wild rice
- 2 c. chicken broth
- 2 Tbsp. olive oil
- 1/3 c. pine nuts
Directions

1Combine currants and brandy and set aside.

2Cook rice according to moisture level on package, using the chicken broth. Bring to a boil, cover and reduce heat.

3Cook for 45 minutes or until rice is tender and liquid is absorbed.

4Stir in currant mixture, olive oil and pine nuts.

5Serves 6.
