Grapefruit Pie

  • 1 (8-inch) graham cracker pie shell, baked
  • 2 c. grapefruit sections (usually 3 grapefruit)
  • 24 large marshmallows, cut or 240 small

Directions

    Drain grapefruit well, but keep juice!

    Heat 1/2 cup of juice (microwave is fine) and add marshmallows.

    Cook on low heat until the marshmallows are melted.

    Watch carefully and stir as needed. Fold in grapefruit sections, pour into the crust.

    Refrigerate at least 1 1/2 hours.

    May be frozen.

    Top with whipped cream when served.

    Is great after a heavy dinner.
