  • 10oz fresh wild caught copper river sockeye.
  • 2 tbsp salt
  • 1.5 tbsp sugar
  • 1-2 tbsp maple syrup
  • Black pepper

    1. Soak fish in brine (cold water + salt. Err on side of too much salt) for 10 min.

    3. Lay large piece of Saran Wrap on counter.

    4. Mix salt, sugar, and black pepper. Sprinkle half tbsp on Saran Wrap.

    5. Place fish on salt mix. Spread on maple syrup.

    6. Sprinkle rest of salt mix

    7. wrap fish in Saran Wrap and place in sealable container.

    8. Refrigerate for 3 days.
