- 1 None onion, peeled and sliced
- 1 lb tomatoes, quartered
- 1 None cucumber, halved lengthways and thickly sliced
- 1 1/4 lbs mixed red and yellow peppers, deseeded and roughly chopped
- 1/2 lb feta cheese, cubed
- 1/2 cup stuffed olives, sliced
- 2 tsp fresh chopped oregano, plus extra sprigs to garnish
- 1/3 cup white wine vinegar
- 1/2 cup olive oil
- 4 None pickled peperoncini
Directions

1Place the onions, tomatoes, cucumber and peppers in a bowl. Toss to mix then divide between four shallow dishes. Top with the feta cheese and olives. Season with salt and freshly ground black pepper and sprinkle over the chopped oregano.

2Drizzle with vinegar and olive oil. Garnish with pickled peperoncini and sprigs of oregano. Serve with pita bread.
