  • 1 c. olive oil
  • 1 c. orange juice
  • 2 c. walnuts, finely chopped
  • 1 1/2 c. sugar
  • 2 1/2 c. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 2 eggs
  • 1 tsp. baking soda
  • 2 oz. cognac
  • 1 c. warm honey
  • 1/4 c. additional walnuts

    Sift flour and spices together. Beat eggs well; add sugar. Add flour and liquids, alternately, to egg mixture, mixing thoroughly after each addition. Add walnuts; mix thoroughly. Stir baking soda into the cognac; mix it into batter. Pour into greased 9 x 12-inch pan. Bake approximately 45 minutes in 400° oven. As soon as cake is baked, remove from oven and cut into squares. Pour warm honey into all lines and around edges of warm cake. Grate walnuts over cake.
