- vegetable cooking spray
- 1/2 c. chopped onion
- 2 c. cooked long grain rice, cooked without salt or fat
- 1 (8 oz.) carton sour cream (nonfat)
- 1 (4 oz.) can chopped green chiles, drained
- 1/2 c. nonfat cottage cheese
- 1/2 tsp. salt
- 1/4 tsp. ground bay leaves
- 1/4 tsp. pepper
- 3 oz. shredded reduced fat sharp Cheddar cheese
Directions

1Coat a skillet with cooking spray.

2Place over medium heat until hot.

3Add onions.

4Saute until tender.

5Stir in rice and next 6 ingredients.

6Add 1/2 Cheddar cheese.

7Spoon mixture into 1-quart casserole.

8Bake at 375° for 30 minutes.

9Sprinkle with remaining cheese.

10Bake 5 minutes more.
