Ingredients

  • vegetable cooking spray
  • 1/2 c. chopped onion
  • 2 c. cooked long grain rice, cooked without salt or fat
  • 1 (8 oz.) carton sour cream (nonfat)
  • 1 (4 oz.) can chopped green chiles, drained
  • 1/2 c. nonfat cottage cheese
  • 1/2 tsp. salt
  • 1/4 tsp. ground bay leaves
  • 1/4 tsp. pepper
  • 3 oz. shredded reduced fat sharp Cheddar cheese

Directions

    Coat a skillet with cooking spray.

    Place over medium heat until hot.

    Add onions.

    Saute until tender.

    Stir in rice and next 6 ingredients.

    Add 1/2 Cheddar cheese.

    Spoon mixture into 1-quart casserole.

    Bake at 375° for 30 minutes.

    Sprinkle with remaining cheese.
