Ingredients
- 1 lb. beef cubes
- 1/4 c. soy sauce
- 1 clove garlic
- 1 1/2 tsp. grated fresh ginger or 1/2 tsp. ground ginger
- 1/4 c. salad oil
- 1 c. green onion, thinly sliced
- 1 c. red or green peppers, cut
- 2 stalks celery, thinly sliced
- 1 Tbsp. cornstarch
- 1 c. water
- 2 tomatoes, cut into wedges
Directions

1Combine soy sauce, garlic and ginger.

2Add beef cubes.

3Toss and set aside while preparing vegetables.

4Heat oil in large frypan or wok.

5Add beef and toss over high heat until brown. Taste meat.

6If it is not tender, cover and simmer for 30 to 40 minutes over low heat.

7Turn heat up and add vegetables.

8Toss until vegetables are crisp, about 10 minutes.

9Mix cornstarch with water.

10Add to pan; stir and cook until thickened.

11Add tomatoes and heat through.

12Makes about 4 servings.
