- 2 Tbsp. oil
- 1 c. white long grain rice
- 1 tsp. salt
- 1 tsp. celery leaves, chopped
- 1/2 green pepper, chopped
- 1/4 c. parsley, minced
- 1/4 c. green onion tops, chopped fine
- 2 c. boiling water
- 2 drops green food coloring
Directions

1Heat oil, rice and salt in skillet that can be covered tightly.

2Mix vegetables and add to skillet with water and food coloring.

3Cover and simmer until done, approximately 1/2 hour. Do not uncover while simmering.

4Makes 4 servings.
