  • 1 small head Boston lettuce
  • 1/2 small head romaine
  • 1/2 clove garlic
  • 3 Tbsp. tarragon vinegar
  • freshly ground black pepper
  • 1 small head Bibb lettuce
  • 1 Belgian endive
  • 6 Tbsp. olive oil
  • 1 tsp. salt

Directions

    Prepare salad greens.

    Wash lettuce, romaine and endive. Separate into leaves, discarding discolored or bruised leaves. Drain well, shaking in salad basket or placing on paper towels, to remove excess moisture.

    Place cleaned greens in plastic bag or wrap in plastic film.

    Refrigerate until crisp and cold, several hours.

    Also refrigerate salad bowl.
