- 8 baby eggplants
- Coarse salt
- 13 cup extra-virgin olive oil
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 3 tablespoons fresh basil leaves, chopped

1Slice off the green tops and cut the eggplants in half.

2Score in a criss-cross pattern using a knife.

3Salt and leave the eggplants for one hour.

4Pat dry.

5Preheat oven to 375 degrees.

6Sprinkle the eggplant with garlic and breadcrumbs.
