- Mullet fish (fresh)
- salt
- red pepper (dried), crushed
- lemon pepper
Directions

1Scale fish; remove head and clean well.

2Cut on either side of the dorsal fin, as filleting and remove back bone.

3Leave fish whole.

4Salt generously.

5Rub with peppers.

6Place in Ziploc bag and refrigerate overnight.

7When ready to grill, rinse and pat dry.

8Cook on charcoal grill over white coals.

9You need to use a fish griller or a closely spaced rack that has been sprayed with Pam.
