- 1 12 cups vinegar
- 1 cup red wine
- 14 cup cooking oil
- 1 bay leaf
- 14 teaspoon thyme
- 5 peppercorns
- 1 medium onion, finely chopped
- 2 tablespoons chopped celery
- 14 teaspoon whole allspice
- 12 teaspoon salt
- 1 medium carrot, finely chopped
- 6 venison steak
- salt and pepper
Directions

1For the marinade: Combine all ingredients in a saucepan.

2Heat mixture to boiling over high heat; reduce heat to low and simmer, covered, for about 30 minutes.

3Set aside to cool completely.

4Cover and store in refrigerator until ready to use.

5Marinate game in refrigerator before BBQ'ing.

6To cook venison, place on a lightly greased, preheated bbq grill and broil 7 to 10 minutes per side.
