- 1 tbsp Canola Oil
- 1 large Jalapeno Pepper (sliced in half lengthwise)
- 3 clove Garlic (smashed)
- 1/4 tsp Cumin Seeds
- 1/4 tsp Sesame Seeds
- 2 large Carrots (1/4-inch slices)
- 1 lb Ground Pork
- 2 tbsp Patak's Hot Curry Paste
- 14 oz Thai Kitchen Light Coconut Milk
- 1 tsp Salt
- 1 1/3 cup Frozen Sweet Peas
Directions

1In a medium saucepan over medium-low heat, add canola oil, jalapeno, garlic, sesame seeds, and cumin seeds.

2Saute for 10 minutes stirring occasionally to toast seeds and flavor the oil.

3Remove the jalapeno and set aside.

4Increase the heat to medium and add the carrots and ground pork.

5Cook until pork is completely cooked through, then remove as much of residual fat as possible.

6Stir in curry paste, coconut milk, salt, and peas.

7Return jalapeno and simmer entire mixture for 10-15 minutes over medium heat.

8Serve over white rice.
